Last weekend Uncle Mike cooked my boys breakfast. They loved it! I was super impressed and so excited to share what he did. I tried it this week and mine did not turn out looking as neat and cute as his. But maybe my second round will go better.
If you are a mom of kiddos and you want to put a new spin on pancakes...this is for you! If you are a mom of a new little eater, and you want something soft and yummy - this is for you. If you like ice cream, and chocolate, with bananas...this could be for you because when I eat them I think how scrumptious they would taste with a little chocolate and ice cream on top!
Here is the recipe:
Make some pancake batter. I use my Grandma Charlie's recipe (and have done half white flour and half whole wheat and they turn out great)
Pancakes
2 cups flour (you could do 1 white and 1 wheat)
2 cups flour (you could do 1 white and 1 wheat)
2 Tablespoons sugar
4 tsp. baking powder
1/2 tsp. salt
1 2/3 cup milk
1 egg
2 Tablespoons oil
Slice up a banana.
Dip each slice of banana and throw them on a skillet. (A tiny bit tedious but worth it)
Cook it just like a pancake!
Top with a little butter, syrup, or powdered sugar (the favorite in our house)...or NOTHING!
Your little ones will love popping them in their mouth. The banana gets soft and mushy - almost like cream! I haven't tried freezing them yet, but I can imagine it working slick as a banana peel on the floor!

Ok, now all you have to do is tell me that they're 0 calories and I'm so down. Oh, who am I kidding? Bust out the butter and syrup because I'm so there.
