So tonight for dinner I was feeling a little adventuresome....you'll understand after you read the blog that inspired me...I had to be feeling nutty. These intrigued me. The recipe is from here.
Like the blogger it took way longer than 45 minutes to bake my potatoes- but I had time. I used huge potatoes too. Ed and I liked them enough. Charley didn't love them and Henry wouldn't touch them. Ed and I agreed that the concept was great but we might try some alternative fixings...maybe a little veggie or some cheddar cheese...but overall they would be an amazing thing to whip out for guests. They look pretty cool. You could totally make these ahead of time and then just plop the egg on and bake. Here are the results of my adventure tonight...it took 2 hours...because the potatoes I used were huge. I think next time I would still use huge potatoes but I would bake them half way first in the microwave. I do not agree with the 10 minute prep time. It took me a little longer to clean out the potatoes...but the time is for a single batch and I doubled mine...so 20 minutes would make sense. The expense is not much. Butter, Parmesan cheese, potatoes, and breakfast sausage of some kind...all can be very affordable!

Looks like a tasty recipe. I did try a new dish on Sunday that turned out good. Abby didn't like it, but she is starting to be picky and if she really would have tried it she would have liked it, I think. :)
