I have shared before that my kiddos don't eat very much cereal.
Their big meal has always been breakfast, so I try to do it up so they start the day off with more than just something fun in a bowl with milk. And frankly, they could eat so much cereal and it is so expensive. So typically, cereal is more of an after school snack or treat.
We make a lot of pancakes....Grandma Charlie's fluffy pancakes, Grandma Schneider's (now Barb's to my kids) skinny pancakes, or buttermilk pancakes from my wedding cookbook. Occasionally, I try to spice it up with something fancy. But all of these pancakes are assembled in a bowl with things like eggs, flour, and milk...no mixes or boxes from the freezer. I often times make a double or triple batch and it keeps a few days in the fridge. Or I make the actual pancakes and freeze them.
We also do homemade waffles a lot. And our most common breakfast is eggs (sunny-side up, over easy, scrambled, sandwich, tortilla, etc).
And sometimes we have french toast.
When we have french toast I typically use french bread. One long loaf requires a double batch of the following recipe....depending on how thin or thick you cut the bread. Sometimes, when I am organized we bake our own.
Making a bigger breakfast in the morning doesn't really take any longer than cereal and milk, maybe the first couple times. But once you know your routine and have the ingredients ready to be pulled out, your favorite bowl and whisk on hand...and my kids appreciate a hot breakfast, so they typically let me get it done and go off to play or get ready for the day.
French toast freezes nicely and turns out slick by just popping it in the toaster.

French toast:
3 eggs
3/4 cup milk
1 Tablespoon sugar
1/4 teaspoon vanilla
1/8 teaspoon salt
sometimes a little cinnamon
1. Beat the eggs, milk, sugar, vanilla, and salt with a wire whisk or hand beater until smooth.
2. Heat griddle or pan over medium heat. I typically grease mine just a little.
3. dip bread in mixture and place on griddle. Cook about four minutes on each side.

We are also a "no cereal" family. In fact, one morning Shawn and I were both sick and gave them cereal and they thought it was the funniest thing ever. We have pancakes on Sundays, weekdays are typically old fashioned oatmeal and eggs or steel cut oats and eggs. Saturday we switch things up with eggs, toast and smoothies or waffles or French toast or omelettes. We are big breakfast people too!
We usually don't eat much cereal either. Maybe once a week, they'll eat Raisin Bran Crunch. THey usually like some combo eggs, toast, fruit, oatmeal and yogurt. With pancakes on the weekends! :) I recently rediscovered my love for French Toast with Cinnamon Chip French Bread. Its so yummy! Mmmm!!
