Feeling Kind of 'Corn'y here...

It is that time of year again.  I hit up the farmer's market yesterday and bought two dozen corn to start my corn freezing extravaganza!  I use these two resources to help me with the process...it all takes about an hour.

From Simple Bites and from Owl Haven

It is sooooo worth it.  All winter long we will enjoy the taste of summer corn in our soups, casseroles, or as just a plain old sidedish.

I spent 10 dollars on corn and had a little over 30 ears.

I made TEN 2-cup bags.
Which brings each bag of corn (the same size as a can of corn) to one dollar!

Now I know a can of corn or a bag of freezer corn is cheaper...
However, the hour it took and $1 a bag for the convience of pulling it out of the freezer is so rewarding.  I am proud supporting local farmers and not the Jolly Green Giant.  I love knowing that it is just plain old homegrown corn..there is no salt or any other questionable substances added to it to keep it fresh or preserved.  It is corn.  Simple. corn.  And the taste is 150 times better!

So I will continue this week freezing corn for the rest of the year - because I love not paying for the garbage that comes with processing it into cans and the gas and pollution that comes with transporting it here and there.  I challenge you to give it a try.  It really is so worth it.

Yeah! Good for you! I love fresh summer corn too. It's really the only time of year that I'll eat corn. It just doesn't taste the same when it's canned.
