At Home Sushi Date Night

Yesterday I surprised Ed with some sushi grade tuna.  We fed the kiddos early and put them to bed early (6:50).  We proved the "Sleep breeds sleep theory" last night.  Having them quiet at 6:50 meant they slept until 7:10!  WOO HOO!

Ed made the rice earlier in the afternoon.

Sushi Rice 

Ingredients:
  • 2 cups sushi or short grain rice
  • 2 cups water (extra for rinsing rice)
  • 2 tablespoons rice vinegar
  • 2 tablespoons sugar
  • 1 tablespoon kosher salt
Directions:
Place the rice into a mixing bowl and cover with cool water.
Swirl the rice in the water, rinse, repeat 2 to 3 times or until the water is clear.
Place the rice and 2 cups of water into a medium saucepan and place over high heat.
Bring to a boil, uncovered.
Next, reduce the heat to the lowest setting and cover.
Cook for 15 minutes.
Remove from the heat and let stand, covered, for 10 minutes.
Combine the rice vinegar, sugar and salt in a small bowl and heat in the microwave on high for 30 to 45 seconds.
Transfer the rice into a large wooden or glass mixing bowl and add the vinegar mixture. Fold thoroughly to combine and coat each grain of rice with the mixture. Allow to cool to room temperature before using to make sushi or sashimi.
We cover it with a damp cloth while it comes to room temp.


Once the kiddos were in bed Ed made us Tequini's.  Nice try honey.  He knows I enjoy Tequila...but this was not how I like it.

Tequini
1-1/2 oz. tequila
1/2 oz. dry vermouth

Shake with ice and serve on the rocks, or strain into a chilled cocktail glass.  Garnish with a slice of lime or a twist of lime peel. 



I am not going to attempt to explain how to make a sushi roll.  I know there are better resources...like here.  But I will say that making your own sushi is not that difficult if you just talk a little confidence into your soul and go for it.....and a Tequini helps.






An at home sushi date night is WAAAAAAAAAAAY cheaper than going out for it.  However, I am determined in the next year to take Ed downtown to a sushi establishment and do the chefs choice experience...where you sit at the sushi bar, give up control, and let them surprise you.  I hear this is the best way to 'do' sushi.

jealous..of date night! we aren't into sushi, but our date night included one picky eating little pigtailed bird at chilis, where they proceeded to screw up the pregnant lady's order twice. bright side? free dinner for pregnant lady!
