This week I spent some time prepping veggies on Sunday so that we could munch them all week. I find if I have a bowl of veggies out on the counter...the boys snack on them all. day. long.
Me too.
Today I upped it and made some of our favorite dip.
It is similar to the famous Rosie's dip from Ed's hometown grocery store deli.
It goes well with EVERYTHING! Seriously, veggies...crackers...chips...pretzels...baked potato...french fries...ANYTHING.
It is basically equal parts of these three ingredients plus some ranch dip mix.
1 cup mayo
1cup cottage cheese
1 cup sour cream
1 pack of ranch dip mix
I usually use one full fat item and then do the other two in a healthier option (Kim's suggestion :)). And I am tempted to try plain Greek yogurt instead of sour cream sometime.
Today I just did 1/3 cup of everything. When we go to the cabin for the week with my whole family we double the recipe and it makes a ton for the whole week.
Enjoy!

Love it, love it, and mine is never as good as yours!
yum yum!!!!! i love this dip. i want some right now. good idea to prep the veggies. makes it so easy during the week and at the end of the week you can whip the ones you didn't eat (if any left) right into a stir fry so you don't have to cut it all again. awesome. keep it up. RR
Ugh. Just messed up a comment...not easy on my Kindle. :( Do you use the "dip" seasoning packet or the :dressing"? I use the dressing one. I've also increased mine to 1 1/2 packets.
